Exploring the Diverse Tastes of Rochester, MN by Allison Libby-Thesing

My husband and I recently had the opportunity to attend the wedding of one of his cousins in Rochester, Minnesota. It was a welcome escape from our daily routine, and we were looking forward to experiencing a change of scenery. Interestingly, during our stay, we encountered a snowstorm, which was uncommon for the area given the relatively mild winter they had experienced. Due to the inclement weather, we opted to stay indoors for the most part, indulging primarily in the local cuisine.

During our visit, we opted to rent a house that typically caters to individuals visiting the Mayo Clinic. Despite this focus, the spacious accommodation was ideal for hosting multiple family members, allowing us to socialize comfortably. In the future, I would recommend opting for a larger space when traveling with a group, especially when bed and breakfast options are limited. Although a nearby bed and breakfast was available, it was located thirty minutes away from the wedding venue, prompting us to choose convenience over proximity.

Our stay in Rochester provided us with the opportunity to sample a diverse array of culinary delights and briefly explore the downtown area. A summer visit would have been preferable, enabling us to partake in activities such as wine or brewery tours via trolley or strolling through the sculpture garden, which was less appealing in the cold weather.

One culinary highlight of our trip was discovering and savoring a vegan donut in Rochester. Despite any preconceived notions, the vegan donut was surprisingly delightful, boasting a light and fluffy texture akin to a traditional cake donut, with a delectable flavor profile that exceeded expectations.

Naturally, our exploration of the city led us to local coffee shops, where we indulged in delightful lattes and cappuccinos—a quintessential way for us to immerse ourselves in the local culture. For lunch, we opted for Thai cuisine at a charming restaurant adorned with lush greenery that transported us to a tropical oasis despite the wintry surroundings. The dishes were perfectly spiced, offering a burst of flavors that left a lasting impression.

Undoubtedly, the highlight of our trip was attending the wedding at a venue that was once an old hay barn owned by the Mayo brothers. The creative transformation of the space lent a unique charm to the event, allowing us to reconnect with family members and revel in the joyous celebration. Witnessing the catering and service at the wedding provided us with fresh inspiration and ideas for future gatherings.

Regardless of the duration of our travels, we always strive to make the most of every adventure. This trip was no exception, as we relished in celebrating the union of the newlyweds and immersing ourselves in a new environment. Among our favorite culinary stops was the Forager Brewery and café, where we wished we had more time to explore their craft beer selection and diverse menu offerings.
